puran poli is famous Maharashtraian sweet made of split chickpeas/chana dal ,I have made this in pure authentic way,here I have used jaggery instead of sugar used all purpose flour ,nutmeg and cardmom for flavour ,when its holi we always make puran poli,it can be preserved for 2-3 days and stuffing can be preserved for 7-8 days in refrigerator friends try this authentic puran poli

Ingredients Serving: 4

  1. for stuffing/puran -----
  2. 200 gms of split chickpeas/chana dal
  3. 200 gms of jaggery
  4. cardmom powder 1tsp
  5. 1tsp nutmeg powder
  6. water for boiling dal
  7. for outer covering/poli ----
  8. 200 gms of all purpose flour/maida
  9. salt to taste
  10. 2tsp of ghee
  11. water to knead the dough


  1. soak dal for 2-3 hours
  2. add little water,remove extra water
  3. pressure cook for 4-5 whistle
  4. check the consistency of dal
  5. dal should be mashed with spoon
  6. cool down and grind boiled dal in mixer
  7. now add jaggery to pan and switch on flame
  8. add grinded dal
  9. keep on stirring till it turns into dough like
  10. add cardmom and nutmeg powder
  11. cool it completely
  12. process of making poli dough----
  13. add salt to all purpose flour
  14. add ghee and mix with fingers
  15. add water and bind soft dough
  16. keep aside for 15 -20 minutes
  17. take small portion of dough
  18. take same proportion of stuffing
  19. roll dough little
  20. place stuffing in middle
  21. seal all the edges
  22. roll like chappati and roast on tawa
  23. apply ghee and serve
