Ingredients Serving: 5

  1. Whole wheat flour - 2cups
  2. Ghee -3 tbsp
  3. Salt 1 pinch
  4. Split gram lintel/ channa dal - 1 cup
  5. Jaggery- 1 cup
  6. Cardamom powder- 1/2 tsp
  7. Nutmeg powder- 1/4 tsp
  8. Saffron - 7-8 strands.
  9. Ghee -2 tsp


  1. Make a dough with wheat flour, ghee and salt.
  2. The dough should be soft and smooth.
  3. Cover it with wet cloth and keep it for 30 mins.
  4. Meanwhile prepare the stuffing/puran.
  5. Wash the daal properly and soak it for 30 mins.
  6. Pressure cook the daal. The water should not be too much as we want the daal to be dry.
  7. Drain the excess water.
  8. In a pan, take 2 tsp ghee and add daal and jaggery.
  9. Stir it well and add cardamom powder, nutmeg powder and soaked saffron.
  10. Mix it well such that the daal should break.
  11. Cook till the mixture is somewhat dry.
  12. Now take some dough and make a ball.
  13. Flatten it and fill the daal mix/puran in it.
  14. Cover it from all sides.
  15. Now roll it like a roti.
  16. On a hot tawa, spread some ghee and put this puran poli on it. Cook it from one side then flip it to other.
  17. Again apply some ghee and cook it properly.
  18. Make all the other puran polis in the same way.
  19. Serve it with shikhand or milk.
