Shahi Kheer

Ingredients to make Shahi Kheer

  • Milk 2 litre
  • rice 150 gm
  • sugar 250 gm
  • ghee 2 tablespoon
  • almond 10
  • cashewnuts 10
  • pistachio 15
  • Raisin 2 teaspoon
  • Few kesar juliennes
  • Green cardamom powder 1/4 teaspoon

How to make Shahi Kheer

  1. soak the rice in water in a bowl for 20 minutes.
  2. Now grind the rice with little water and make a coarse batter.
  3. Take an aluminium vessel and pour rice batter and milk in it and stir continuously until the milk become thick.
  4. now add sugar and cook for 10 minutes more on medium flame and then add green cardamom powder.
  5. sauté all the the dryfruits in ghee and keep aside.
  6. Now add finely chopped dryfruits in kheer.
  7. switch off the flame and take out the kheer in a bowl.
  8. Garnish with dry fruits and kesar juliennes.

My Tip:

Don't make very fine paste of kheer.
