ABOUT Caramelized Carrot Cake RECIPE

Caramelized carrot cake recipe is a variation to the carrot cake. This cake is made using wheat flour, all purpose flour and carrots. It is a great way to feed carrots to your kids.

Ingredients Serving: 6

  1. 1/2 cup wheat flour
  2. 1/2 cup all purpose flour
  3. 1/4 cup milk powder
  4. 1 tsp Baking powder
  5. 1/4 tsp Baking Soda
  6. 1/4 cup + 1 tbsp butter
  7. 3/4 cup sugar
  8. 3/4 cup carrots, grated
  9. 2 tbsp Chopped Cashews
  10. 1/2 cup milk or as required
  11. 1/2 Tsp Vanilla essence

Instructions

  1. For making caramelized carrots, firstly take 1/2 cup sugar and 2 tbsp water in a pan.
  2. Put it on medium flame and let it form a syrup.
  3. When the sugar syrup turns to an amber color, add 1 tbsp butter and whisk well.
  4. Now add carrots and cashews, mix well.
  5. Let it cook for 5 minutes on low flame.
  6. Turn of the flame and allow the carrots to cool.
  7. Preheat the oven at 180 degrees and grease the cake pan with oil.
  8. In a bowl, shift wheat flour, all purpose flour, milk powder, baking powder, baking soda and keep aside.
  9. In a separate bowl, take remaining 1/4 cup sugar, 1/4 cup butter, vanilla essence and milk.
  10. Beat the mixture using a whisk for 5 minutes or until all ingrediants are well combined.
  11. Now add the caramelized carrots into the mixture.
  12. Next add the shifted flour mixture and gently fold.
  13. If needed add some more milk to get the desired consistency.
  14. Pour the batter into the greased pan and bake at 180 degrees for about 30-35 minutes.
  15. To check if the cake is done is to insert a toothpick and if it comes out clean then the cake is done.
  16. Serve this cake to your kids as an after school snack or enjoy as a tea time cake with a cup of masala tea.
