Yes Brinjal cake.... a delicious and healthy treat for your kids. This brinjal or eggplant cake contains oats and almonds and no wheat.

Ingredients Serving: 6

  1. Brinjal 1 big size
  2. Oats 90 g
  3. Almond 100 g
  4. Granulated sugar 1 and 1/2 cup
  5. Egg 3
  6. Vegetable oil 1/4 cup
  7. Vanilla extract 1 teaspoon
  8. Cinnamon powder 2 teaspoon
  9. Baking soda 1/2 teaspoon
  10. Baking powder 1 heaped teaspoonful
  11. Lemon juice 1 tablespoon
  12. Honey 2 tablespoon
  13. Salt 1/4 teaspoon
  14. Chopped pistachios and almonds
  15. Butter or oil for greasing
  16. 1 tablespoon cornflour

Instructions

  1. Preparation: wash the brinjal. Pat dry with a kitchen tissue. Make a deep slit lengthwise and keep aside.
  2. Grind oats and almonds separately and make flour.
  3. Bake the brinjal at 200°C for about 40 minutes
  4. After baking let it get room temperature.
  5. Remove the skin and take it in a mixture grinder. Make puree .
  6. In a mixing bowl whisk eggs one by one with sugar until sugar melts.
  7. Add vegetable oil and whisk it again
  8. Add vanilla extract and mix.
  9. Add oats flour in small quantity at a time and blend until mixed nicely add baking powder and baking soda.
  10. Add brinjal puree .
  11. Blend it until mix well.
  12. Add floured almonds and blend again.
  13. Add cinnamon powder, salt, lemon juice and honey
  14. Mix well. Give your batter a final stir.
  15. Baking: Grease your baking container with butter or oil. Dust it with corn flour . Sprinkle some chopped pistachios.
  16. Pour the batter in it. And sprinkle little more chopped pistachios on it
  17. Bake it at 190°C for about 45 minutes in preheated oven.
  18. Insert a toothpick in it . If it comes out clean then cake is well baked.
  19. Otherwise bake it until done.
  20. Then invert the container on a plate or on the wire rack and let get room temperature.
  21. Sprinkle chopped almonds
  22. Cut into pieces
  23. And serve
  24. Enjoy delicious Brinjal cake
