ABOUT Amritsari wadi khichdi RECIPE

It is a rice and lentil dish which is made from wadis famous of Amritsar.

Ingredients Serving: 4

  1. 2 big sized Amritsari wadi
  2. 1.5 cup rice
  3. 2 tbsp ghee
  4. 1tsp cumin seeds
  5. 1 small onion grated
  6. 2 tomatoes grated
  7. 1tsp grated ginger
  8. 1tsp minced garlic
  9. Salt to taste
  10. 1tsp red chilli powder
  11. 1/2 tsp turmeric powder
  12. 2-3 slitted green chillies
  13. 1tsp all spice powder
  14. For tampering
  15. 1 tbsp ghee
  16. 2 tbsp sliced garlic
  17. 1/2 tsp coriander seeds
  18. 2 red chillies
  19. 1/2 tsp red chilli powder
  20. Salt to taste
  21. 1/4 cup water
  22. Chopped coriander leaves for garnish

Instructions

  1. Wash the rice and soak in water
  2. Put 1 tbsp ghee in a wok and stri fry the wadi in it. Keep aside.
  3. In the same wok add another tablespoon of ghee and put cumin seeds.
  4. Let them splutter.
  5. Now add grated onion
  6. Saute till golden
  7. Now add grated ginger and minced garlic and mix well.
  8. Keep cooking till raw smell escapes
  9. Now add in tomato and cook on medium flame , stirring occasionally, until the masala starts leaving ghee.
  10. Add salt and all the dry spices and mix well.
  11. Now strain the rice and add to the masala.
  12. Break the wadis into pieces and add it to the rice masala mix
  13. Cook for another couple of minutes and add water as required .
  14. Cook till 2 whistles and switch off the flame.
  15. For tampering : In a tadka pan add ghee and garlic.
  16. Keep stirring until the garlic turns golden
  17. Now add coriander seeds, slitted green chillies, red chilli and the chilli powder.
  18. Now add water and bring it to boil. Pour the tamper over the rice and garnish with coriander leaves.
