Ingredients Serving: 4

  1. Baby potatoes - 12
  2. For potato coating
  3. Red chilli powder - 1 tsp
  4. Turmeric Powder - 1/4 Tsp
  5. Salt a pinch
  6. Oil - 3 tsp
  7. For gravy
  8. Oil - 1 tsp
  9. onion - 1
  10. Ginger - 1/2 inch
  11. Garlic - 3
  12. Elachi - 2
  13. Cloves - 2
  14. Cinnamon stick - 1/2 inch
  15. Tomatoes - 2
  16. Cashew nuts - 5
  17. For dum aloo
  18. Oil - 4 tsp
  19. Butter - 2 tsp
  20. Cumin Seeds - 1 Tsp
  21. Crushed fennel seeds - 1 tsp
  22. Kasuri methi - 1 tsp
  23. Black pepper - 5
  24. Bay leaf - 1
  25. Red chilli powder - 1 tsp
  26. Coriander powder - 1 tsp
  27. Garam Masala powder - 1/2 tsp
  28. Turmeric Powder - 1/4 Tsp
  29. salt as per taste
  30. Water - 1 cup

Instructions

  1. Wash baby potatoes and cook it for 1 whistle, remove it skin and keep it aside.
  2. Now poke all the boiled potatoes with fork so that potato absorbs masala well.
  3. Now add red chilli, turmeric powder, salt, 1/2 tsp of oil to the potatoes mix well.
  4. Heat 2 tsp of oil in a Kadai and saute potatoes till it becomes roast and changes color. Take it into plate.
  5. In the same pan add oil fry elachi, clove, dalchini, onion, ginger, garlic, pinch of salt. Let it cool and grind it into smooth paste, and take it into bowl.
  6. Also grind tomatoes and cashew nuts to fine paste and take it into bowl.
  7. Heat oil in a pan add cumin, crushed fennel seeds, kasuri Methi, pepper, bay leaf and fry it well.
  8. Keep flames low and add red chilli powder, coriander powder and garam masala powder mix everything well. Now add onion masala paste fry it on low flames for 2 minutes.
  9. Now add Tomatoe and cashew nuts paste mix everything well till oil oozes out.
  10. Now add 1 cup water and fried baby potatoes and mix everything well. Close lid and cook it on low flames for 10 minutes so that potatoes will absorb masala.
  11. Atlast dd butter and saute everything once. That's it our Punjabi style Dum Aloo is ready to serve :yum:
