One of Kerala's famous breakfast dish made using rice flour with a touch of mint leaves.
In a grinder take mint leaves, coriander leaves, green chillies and about 2 tbsp of water. Grind these to get a fine paste.
After grinding strain the paste and keep the green water aside for later use to make idiyappam.
Take the plain water and make it hot.
Now in a bowl take the rice flour and mix in salt as per taste.
Into this add the mint water and mix the flour very well using a spoon or spatula.
Now gradually add the hot water and keep on mixing.
Once all the ingredients are incorporated well use your hands to knead the dough.
Kneading with hands will result in a soft idiyappam dough.
To make idiyappam we need Sev making machine and a vessel to steam the idiyappam. We can even use Idli making vessel.
Put some amount of dough into the machine.
Take a dish that fits in the steamer, grease it with oil or place a layer of wet cloth.
With the help of machine make small appams on the dish.
Place this dish in the steamer. Steam and cook for about 10 minutes.
Repeat this till the dough is completely used up and cooked.
Soft pudina flavoured idiyappams are ready. Serve with vegetable stew, egg curry or any curry of your choice.
