Kesari is common southindian sweet. I have been thinking, what about adding carrot puree to the kesari instead of adding food colour to the kesari.. i gave a try and it came out very well. Hope u all give a try and let me know how it turn out for you.

Ingredients Serving: 2

  1. Rava one cup
  2. Carrot 3 small
  3. Sugar 3/4 cup
  4. Water 2 cups
  5. Cashews and almonds few
  6. ghee 2 tblspn

Instructions

  1. Peel carrots and chop it. Pressure cook it with 1/4cup of water. Once cooked transfer the carrots along with cooked to the mixie and grind it in to smooth paste.
  2. Heat two teaspoon of ghee in a frying pan and fry cashews and almonds. Transfer it to a plate.
  3. Now add rava to the remaining ghee in the pan and roast it for two minutes. Then transfer it to a plate.
  4. Heat 2 cups of water in a pan. Once it starts to boil add rava cook till mushy.
  5. Now add carrot puree and sugar to the rava and mix well.
  6. Add remaining ghee and mix well. Keep stirring until it becomes thick and leaves the sides of the pan.
  7. Finally add fried cashews and almonds.
  8. Yummy colourful, healthy carrot Kesari is ready without adding food color.
