Evergreen traditional recipe. It is served along with idly, vadai, sambar in every marriage for breakfast.

Ingredients Serving: 6

  1. 1 cup rava / semolina
  2. Ghee-5-6tblspn
  3. 1 cup sugar
  4. 3 cups water
  5. Kesari food colour-2 pinch
  6. Fat pinch of green cardamom powder
  7. Cashews and raisins as need


  1. Roast semolina on a medium flame with 2 tblspn ghee till it is lightly roasted yet not discolored. Keep this aside.
  2. Add ghee to a pot and fry nuts and raisins. Set these aside as well.
  3. Pour water, add sugar and saffron colourand wait till the sugar dissolves, bring the water to a rapid boil.
  4. Add semolina in a slow stream, stirring with the other hand to break up the lumps. Add rose water if using.
  5. Cover and cookit to reaches a halwa consistency. Add ghee to the kesari.
  6. Garnish rava kesari or kesari bath with nuts and raisins.
