ABOUT Cashew Apple Cake RECIPE

Cashew Apple( cashew fruit) has always been second to the Cashewnut which is very popular and widely used world over. Its juice is used to make the feni but very few recipes involve use of the actual fruit..the Cashew Apple. Today I tried a traditional Goan cake with Cashew Apple.Baked in our traditional stovetop oven it turned out super awesome.

Ingredients Serving: 12

  1. CashewApple- 3- cups
  2. Coarse Rava- 1- cup
  3. FineRava- 1- cup
  4. Grated coconut- 1- cup
  5. Jaggery- 2- cups
  6. Thick curd- 2- tbsp
  7. Cashewnut- 2- tbsp
  8. Ghee- 2- tbsp

Instructions

  1. Roast both Rava till slight aroma drifts
  2. Wash the fruit and chop roughly. Apply a little salt and keep aside. Then in a blender blend it.
  3. Dry roast and chop the nuts roughly.
  4. Mix all the ingredients into a thick bottom vessel and leave for soaking for about 10 minutes.
  5. Then heat the misture over low flame and simmer for 5 minutes till misture thickens a bit.
  6. Transfer the batter to the grased mould and bake for 35 minutes at 180°C
