Ingredients to make Coconut Avocado icecream

  • 2 ripe avocados pureed approximately 450 grams
  • 400 grams good quality coconut cream ( home made or canned)
  • 1/2 cup heavy cream
  • A good pinch of salt
  • 3/4 cup sugar (Here you can add more or less depending on how sweet you prefer your ice cream)
  • Lime juice from 2 medium lemons (Here again add more or less)
  • Toasted coconut for garnishing

How to make Coconut Avocado icecream

  1. Blend everything to a smooth paste and pour into your ice cream container and leave in the freezer.
  2. If you have a churner you can use that or else in intervals take the ice cream out and agitate it by whisking so that in the end you get a good creamy texture.

My Tip:

Get the ripest avocados and good quality coconut cream.
