Ingredients to make Coconut Pineapple Laddoo

  • pineapple paste - 3/4 cup
  • sugar - 7 tablespoon
  • Milk Powder - 1/2 cup
  • Desiccated coconut - 1/2 cup + more for coating
  • cardamom powder - 1 pinch

How to make Coconut Pineapple Laddoo

  1. In a non stick pan, take pineapple paste and cook it untill it gets a bit thick.
  2. Add milk powder and desiccated coconut. Mix very well. Add sugar and cardamom powder and mix again. Let the mixture cook untill it starts leaving the sides of the pan.
  3. Remove the mixture to a big bowl and let it cool down completely.
  4. Take small portion of the mixture and roll it in between your palms and make ball/ laddoo. Likewise, make laddoos with the remaining mixture.
  5. Roll the prepared laddoos in deisccated coconut. Serve.
  6. Keep refrigerated in an airtight container and consume within 3-4 days.

My Tip:

Adjust the sugar level as per your liking. Quantity of desiccated coconut can also be adjusted as per liking but add more milk powder to adjust the consistency. Instead of cardamom powder you can add a few drops of pineapple essence.
