Ingredients to make Khasta khakhara

  • besan - 2 tbsp
  • wheat flour - 50 gms
  • Kasoori methi - a pinch or more if you like the flavor
  • Ajwain - as per taste
  • salt - as per taste
  • Red chili powder as per taste
  • ghee for sauteing and kneading
  • water for kneading the dough

How to make Khasta khakhara

  1. Take a kadai on a medium flame, add 1 tsp ghee, add besan and saute it. Add ajwain, kasoori methi, red chili powder and salt to it. Mix well.
  2. Saute them till the aroma comes, turn off the gas, take out the masala in a bowl, keep it aside to cool down as its very hot.
  3. Take another bowl, add wheat flour, 2 tbsp ghee and mix it well. With the help of water, knead a dough.
  4. Now take equal parts of balls from the dough, in this quantity we can make 5 balls easily.
  5. With a rolling pin, roll 1 ball, spread 1 tsp ghee on the rolled ball, take little portion of masala, place it in the center of the rolled ball, close it from every side just like bharwan paratha.
  6. Again rolled this masala filled ball, roll it as thin as you can, heat the tawa on medium flame.
  7. Place the masala filled thin khakhra on tawa, cook it from both side by applying a little bit ghee on both sides.
  8. Apply ghee for making it khasta. While cooking press khakhra from any steel glass to make it as thin as possible.

My Tip:

If you do not want to make khasta khankhara in good quantity at a same time than just make the masala and store it in airtight container.
