ABOUT Amaranth Kheer RECIPE

This is one of the most tastiest kheer, I made with amaranth. unlike other kheers or puddings which are smooth to the palate, this one has a crunchy texture. this crunch comes from the amaranth grains and it is this crunch that does make this kheer different from other kheers.

Ingredients Serving: 3

  1. 1/2 cup amaranth grain/rajgira/ramdana
  2. 2 cups Milk
  3. 4 tbsp milk pwd
  4. 3-4 pieces of sweet petha (grated) or as per taste
  5. 2 tbsp mixed dry fruit
  6. 1/4 tsp Cardamom Powder
  7. Pinch of jaifal pwd

Instructions

  1. Start with roasting 1 tsp of rajgira at a time in a sufficiently hot heavy base pan.
  2. Keep stirring continuously until they puff up well. Then sieve roasted rajgira in small amount and keep the puffed rajgira in a bowl.
  3. Add 2 cups of milk in a heavy bottom pan , when it comes to boil simmer on a low flame for 6 to 7 minutes. Add puffed rajgira, do keep on stirring at intervals so that the kheer does not stick or get browned from the base, add milk pwd and grated sweet petha.
  4. Stir again and simmer the kheer for 2 minutes more.lastly add sliced cashews or almonds, 1/4 tsp cardamom powder, you can also add raisins and crushed saffron, stir again.
  5. Serve amaranth kheer hot or warm or chilled. once the kheer comes to room temperature, you can chill it in the fridge.You can garnish with some saffron strands or sliced almonds or cashews, while serving.
