Ingredients to make Egg Kurma

  • Hard boiled eggs 4
  • onions finely chopped 2
  • tomato finely chopped 1
  • ginger garlic paste 2 tsp
  • chilli powder 2 tsp
  • coriander powder 1 tsp
  • turmeric powder 1/4 tsp
  • oil 4 Tsp
  • salt to taste
  • water one cup
  • For tempering:
  • bay leaves 2
  • cinnamon blades 1
  • cloves 2
  • curry leaves 1 sprig
  • For paste: Grated coconut 1/2 cup
  • green chillies 3
  • poppy seeds 2 tsp
  • Cashewnut 10

How to make Egg Kurma

  1. In a wok add oil, add the green chillies, saute and keep aside.
  2. In the same wok, add the ingredients for tempering.
  3. Add the chopped onions and saute until translucent.
  4. Add the ginger garlic paste and cook until the raw smell goes.
  5. Add the tomato, salt, chilli powder, coriander powder and turmeric powder.
  6. Add a cup of water and allow to boil.
  7. Add the ground paste of coconut, green chillies, cashew nuts and poppy seeds. Cook on a low flame to prevent curdling.
  8. Cut the eggs to halves and add to the kurma and cook for two to three minutes.
