A south indian lentil and coconut based gravy made with snake gourd and carrots.

Ingredients Serving: 4

  1. Mokng dhal - 1 cup
  2. Snake gourd - 2 , diced
  3. Carrots - 2, diced
  4. Sambar powder - 1 tbsp
  5. Turmeric powder - 1 tsp
  6. Green chillies - 3-4
  7. Coconut, grated - 3 tbsp
  8. Oil - 1 tbsp
  9. Mustard seeds - 1 tsp
  10. Cumin Seeds - 1 Tsp
  11. Curry leaves - a few
  12. Asofoetida - a pinch
  13. Salt - to taste
  14. Dried red chillies - 2
  15. urad dal - 1 tsp
  16. Ghee - 1 tbsp

Instructions

  1. In a pressure cooker, add 1/ 2 cup of the washed lentils, 1 1/2 cup of water, turmeric powder and pressure cook for 3-4 whistles. Mash really well once it's cooked down.
  2. In a pan, heat some water and bring it to a boil. Add the snake gourd and carrots and cook until half done.
  3. Add the mashed dal to this, some salt to taste and the sambar powder.
  4. In the meanwhile, grind together coconut and the green chillies.
  5. Add this paste to the vegetables and let it cook on a gentle simmer for about a minute or two , making sure the lentils don't burn.
  6. For the tempering, heat some oil and ghee and add some mustard seeds to it.
  7. Once it begins to crackle, add the cumin seeds, urad dal, dried red chillies, curry leaves and a pinch of the asofoetida.
  8. Add the tempering to the vegetable and lentil mixture and serve hot with steamed rice .
