Mixed vegetable gravy

Ingredients to make Mixed vegetable gravy

  • Vegetables (I used carrots, beans and potatoes ) - 2 cups, boiled
  • onions - 2, sliced
  • tomatoes - 3 , roughly chopped
  • cashews - 6-7
  • ginger garlic paste - 1 tbsp
  • turmeric powder - 1 tsp
  • red chilli Powder - 2 Tsp
  • Garam masala Powder - 1 tsp
  • Kasuri methi - a fat pinch
  • sugar - 1/2 tsp
  • salt - to taste
  • oil - 1 tbsp
  • ghee - 1 tbsp
  • cumin Seeds - 1 Tsp

How to make Mixed vegetable gravy

  1. In a pan, heat 1/2 tsp oil and add the onions and ginger garlic paste.
  2. Add a pinch of sugar to caramelize the onions.
  3. Once the onions become translucent, add the tomatoes and cashew and cook until mushy.
  4. Cool the mixture and grind into a smooth paste with some water.
  5. In the same pan, heat the remaining oil and ghee and add cumin seeds.
  6. Add the ground paste, turmeric powder, red chilli powder, salt 1 cup of water, cover and cook for a good 5-7 minutes.
  7. Add the vegetables, garam masala powder, kasuri method and mix well.
  8. Bring to a boil. Check for Seasoning and turn off the heat.
  9. Serve hot with rice/roti.

My Tip:

You can use any vegetable you want.
