Chicken with Lychees

Ingredients to make Chicken with Lychees

  • chicken breasts 3 large sized
  • cornflour as required
  • oil 1/4 cup
  • Red pepper 1 chopped
  • Green shallots 6 chopped
  • water 1/2 cup
  • chicken stock cubes 2
  • tomato chilli sauce 1/4 cup
  • sugar 1 tsp
  • Canned lychees 425 gm, drained
  • Corn flour 1 tbsp, extra
  • water 2 tbsp, extra

How to make Chicken with Lychees

  1. Remove the chicken meat from the breast and cut to make 6 pieces. Then cut each piece into half lengthwise, next cut each half into 3 pieces each.
  2. Toss the chicken in cornflour and shake away the excess.
  3. Heat oil in a wok or frying pan, then add in the chicken pieces. Fry until they turn golden.
  4. Add in the pepper and shallots, stir fry it for 1 minute. Then add in the combined water, crumbled stock cubes, sauce, sugar and lychees. Simmer and cook for about 5 minutes or until it's just cooked through.
  5. Stir in the blended extra cornflour with extra water. Stir and cook until the mixture boils and thickens itself.
  6. Serve it immediately for best taste.

My Tip:

Extra chilli paste & Soy sauce can be added during marination.
