Stuffed Tomatoes

Ingredients to make Stuffed Tomatoes

  • tomatoes small 6-8 (cut and deseeded. Scoop and use pulp to make the tomato puree for gravy)
  • For the stuffing:
  • paneer 150 grams
  • Green chilli 1 chopped
  • coriander leaves (chopped) 1/2 cup
  • lemon juice 1 tsp
  • Grated ginger 1 tsp
  • salt as per taste
  • red chilli powder 1 tsp
  • Garam masala/Piri piri masala 1 tsp
  • For the gravy:
  • onion 1 grated
  • tomatoes 3 blanched and pureed ( you can use two tomatoes and above scooped pulp)
  • cashews 7-8 (soaked in water for 15 mins)
  • ginger-garlic paste 1 tbsp
  • Chopped green chillies 1-2
  • Garam masala 1 tsp
  • red chilli powder 1/2 tsp (as spicy as you want)
  • turmeric powder 1/2 tsp
  • cloves 3-4
  • cinnamon 1 inch
  • sugar 1/2 tsp
  • oil 4 tbsp
  • Kasuri methi 1 tbsp
  • salt as per taste

How to make Stuffed Tomatoes

  1. Mix all the ingredients mentioned for stuffing and filll it in the tomatoes. Keep it aside.
  2. For the gravy, blanch the tomatoes and make a puree of it with the cloves, soaked cashews and cinnamon.
  3. In a wok, heat oil then add in the grated onion, ginger-garlic paste and saute for 2 minutes.
  4. Add in the tomato puree and cook till it starts leaving the oil, then add in the sugar, salt, and all the masalas.
  5. Pour in enough water for the consistency of the gravy, then carefully place in the stuffed tomatoes.
  6. Cook it covered till the tomatoes are properly done. Then add in the kasuri methi. Garnish with coriander leaves.
  7. Serve it hot with phulka /roti/nan.
