Beetroot Khichadi

Ingredients to make Beetroot Khichadi

  • Beetroot 2 medium
  • onion 1 small
  • green chillies 3
  • mustard seeds 1 tsp
  • curry leaves 4-5
  • oil as required
  • curd 250 ml

How to make Beetroot Khichadi

  1. Grate the beetroot finely. Then mix the chopped onion and green chillies with the grated beetroot.
  2. Heat a pan with oil, then add in the mustard seeds, wait for it to splutter then add in the curry leaves.
  3. Now add the beetroot-onion mixture to the pan, it will take 5 to 7 mins to cook.
  4. Take 250 ml curd in a bowl and mix the beetroot with this curd. It is ready to be served.

My Tip:

You can boil the beetroot instead of frying it. Then in the final step just make a tadka of mustard seeds and curry leaves.
