Ingredients Serving: 8

  1. Whole wheat flour - 150 grams
  2. All purpose flour - 100 grams
  3. Canola oil - 80 ml
  4. Yogurt (water drained) - 1/2 cup
  5. Brown sugar - 75 grams
  6. Granulated sugar - 100 grams
  7. Eggs - 2
  8. Orange juice - 1/2 cup
  9. Orange zest from 2 oranges
  10. Baking powder - 1 and 1/2 tsp
  11. Baking soda - 1 tbsp
  12. Dark chocolate chunks - 1/2 cup
  13. Chocolate chips to sprinkle on top - 2 tbsp
  14. Dried cranberries to sprinkle on top - 2 tbsp
  15. Poppy seeds to sprinkle on top - 1 tbsp
  16. Vanilla extract - 2 tsp
  17. Salt - 1/2 tsp

Instructions

  1. Preheat the oven to 220 degrees celsius. Grease the muffin pans with some melted butter and flour or line with cupcake liners.
  2. Take a large sized bowl, add sugar and oil and beat well using a hand mixer till it's mixed well.
  3. Add eggs one at a time and beat till it's combined well. Then add in the yogurt, vanilla extract and orange juice. Beat till they are combined. Add in the orange zest and mix.
  4. Take a medium bowl, add in the whole wheat flour, all purpose flour, baking powder, baking soda and salt. Mix it well.
  5. Next, add the dry ingredients to the wet ingredients. Using a rubber spatula mix until just combined. Do not overmix. Gently fold in the chocolate chunks.
  6. Next spoon the the batter into the prepared muffin pan till 3/4th.
  7. Sprinkle poppy seeds, chocolate chips then dried cranberries in the order mentioned.
  8. Bake at 220 degrees celsius for 5 minutes.
  9. Now lower the temperature to 180 degrees celsius and bake for further 15-18 minutes or until a skewer comes clean. Enjoy.
