Ingredients to make Tasty coconut rice ( variety rice for lunch )

  • rice : 1 and half cup of boiled rice
  • coconut : 1/2 cup grated coconut
  • Coconut oil 2 tablespoon for a good aroma for the rice. You can use any oil .
  • Red chillies - 1
  • cashew nuts roasted : 8 nos.
  • Aesofotida : a pinch
  • mustard (small one ) :1/2 tsp
  • curry leaves : few
  • Channa daal : 1/2 tbsp
  • salt : as required.
  • Papad : either fried with oil or without oil.( broken into small pieces ) - For kids

How to make Tasty coconut rice ( variety rice for lunch )

  1. Heat coconut oil in a kadai , add mustard, curry leaves , red chilli, aesofotida powder, channa daal , cashew nuts and fry it.
  2. Add grated coconut and when it comes golden brown , add salt and broken papad (optional) and off the stove.
  3. Add the boiled rice and stir it . close the lid of the kadai and leave it for 10 mints.
  4. Serve with by adding a Teaspoon of coconut oil .

My Tip:

Please use coconut oil as it will have a good taste for coconut rice. If no, use any oil ( sunflower, ricebran, gingelly oil ) :)
