Ingredients Serving: 10

  1. 1 big bowl gobhi florets
  2. 1 bowl carrots cut lengthwise
  3. 2 tsp mustard seeds
  4. 1 tsp methi dana
  5. 2 tsp saunf
  6. 1.5 tsp red chili powder
  7. 1tsp Haldi powder
  8. 2tsp garam masala
  9. 1 small bowl ginger pieces
  10. 6-7 greenchilies
  11. 1 cup gud
  12. 2 cups vinegar
  13. Salt (2 tsp) or more according to taste.
  14. Mustard oil 2 cups


  1. Boil gobhi florets in water for 2-3 minutes Boil gajar as well for 2-3 minutes Completely drain and dry the florets .
  2. Dry the veggies otherwise moisture will spoil the achar. You may dry veggies in the Sun or under a fan.
  3. Grind mustard ,Saunf and methi dana coarsely Boil vinegar in a pan. add gud. Stir till it dissolves completely.
  4. Heat Mustard oil till smoke comes
  5. Cool for a while then add all the masalas and mix well. then add gobhi ,gajar ginger pieces Green chillies. Mix well add vinegar and gud . Mix again thoroughly.
  6. Your gobhi gajar achar is ready. Keep in an airtight jar and enjoy the pickle

My mom loves making this as soon as winters begin,.. yummy with garam garam plain paratha n chai ... heaven!
