About Moist Banana Cake Recipe

The secret to this yummy cake is to use very ripe and sweet bananas. Wonderful with a scoop of vanilla Ice cream on the side for kids and some masala chai/coffee for grown-ups.

Moist Banana Cake

Ingredients to make Moist Banana Cake

  • 100g unsalted butter
  • 275g caster sugar
  • 2 eggs (beaten)
  • 350g Plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 large very ripe bananas
  • 1 teaspoon vanilla extract
  • 75ml buttermilk
  • handful of flaked almonds

How to make Moist Banana Cake

  1. 1. Preheat oven at 180 C.Grease the bottom and sides of a loaf cake tin and dust it with a little flour.Shake out any excess flour., or use butter paper to line.
  2. 2. Put the butter in a bowl and cream it with the caster sugar until the mixture is light and fluffy,Now add the beaten eggs one at a time.Beat well after each addition.
  3. 3. Sift together the flour,baking powder,baking soda and salt.Mix the dry ingredients with the creamed mixture until the mixture becomes well blended.
  4. 4. Mash down the bananas with a fork and stir in the vanilla extract and buttermilk.Gradually beat the banana mixture into the cake mixture.
  5. 5. Pour the cake mixture into the cake tin, sprinkle flaked almonds on top and bake at 180 C for about 30-40 mins,or until well risen and firm to touch and almonds are lighly toasted. If it seems like the almonds are getting too much colour, simply cover cake with a piece of foil and continue baking, this way the top will not get any more browning.
  6. 6. Cool in the tin on a wire rack for a short time,then turn the cake out on to the rack to cool completely.

My Tip:

Walnuts instead of Almonds on top tastes equally delicious!Make banana muffins if you have any leftover batter.
