Coconut Rice

Ingredients to make Coconut Rice

  • rice - 3 cups
  • carrots - 2medium sized
  • cauliflower florets 2 cups. (You may add more vegetables like beans, green peas if you wish to)
  • onions - 4 medium
  • green chillies - 5
  • red chillies - 2 to 3
  • curry leaves - 2 stalks
  • cashew nuts - 2 fistful
  • coconut milk of half a coconut
  • water
  • Tempering -
  • bay leaves 3 to 4,
  • ginger garlic paste - 2 tsp
  • red chilli powder - 1 tsp
  • turmeric - 1/2 tsp
  • star anise 1 or 2
  • Whole spices powder- 6 to cloves, 1" cinnamon stick, 6 cardamoms, small piece of nutmeg
  • salt to tast
  • ghee
  • oil

How to make Coconut Rice

  1. Preparations -
  2. Grinding whole spices, slicing onions, making the ginger garlic paste, extracting coconut milk, soaking the cashew nuts,blanch the cauliflower florets.
  3. First wash and soak rice
  4. Now Take some oil and ghee In a pan
  5. Add the ingredients for tempering
  6. Add the broken green chillies, red chillies
  7. Saute for a while and add the sliced onions
  8. Now saute the onions till nice golden colour and then add the ginger garlic paste and curry leaves
  9. Now saute for a while and add the chopped vegetables and soaked cashews
  10. Add the dry powders and some salt
  11. Saute for a while
  12. Now add the washed and soaked rice
  13. Mix and add required quantity of water, remembering to add coconut milk later, count total number of cups of water and coconut milk.
  14. Now wait for a boil
  15. Next, add the coconut milk
  16. Mix and check taste for salt
  17. Now cover and cook till done. For 15 minutes or more
