Mini Chicken Tandoori Pizzas

Ingredients to make Mini Chicken Tandoori Pizzas

  • 3 cups of all purpose flour
  • 1/4th cup of milk powder
  • 1 cup of warm milk
  • 2 tsp of yeast heaped
  • 1 tsp of sugar
  • 2 tbsp of olive oil
  • Mozzarella cheese
  • 2 tbsp of oil
  • 250 gm chicken ; cut into very small pieces
  • 1 tsp of garam masala
  • 1 tbsp of tandoori masala
  • chilli garlic ketchup or pizza sauce as needed.
  • salt
  • 1 onion ; thinly sliced
  • olives
  • Bellpeppers ( optional )
  • An egg white
  • Black seeds ( kalonji ) or sesame seeds
  • A charcoal piece
  • A small piece of aluminium foil

How to make Mini Chicken Tandoori Pizzas

  1. In a deep bowl , put in the flour and the milk powder.
  2. Warm up the milk and add the yeast and sugar and wait till you can smell it and till it becomes spongy like.
  3. Start kneading your flour with the warm milk , preferably with your hands so that it kick starts the activity of the yeast .
  4. Once your dough is done , coat it with olive oil and place it in a warm place and let it rest for about 2 hrs or till your dough rises to double it's original size .
  5. When the yeast is done , knead it once again in order to get all that air out .
  6. In a pan with 1 tbsp of heated oil , add in the chicken .
  7. Put in the masalas and stir till the chicken is done . Lastly , season with salt .
  8. Heat your charcoal piece and place it in a piece of foil . Put it in the pan with the cooked chicken . Pour a tbsp of oil over the charcoal and cover the pan with a lid .
  9. Preheat your oven on 180° .
  10. Take a small portion of dough and flatten it out evenly . Do this till you have finished the entire dough .
  11. Let these flattened out pizza bases rest for another 20 mins or so for another round of rising in a warm place .
  12. Next , spread ketchup and put on the toppings .
  13. Finally , finish the pizzas by topping them with mozzarella .
  14. Bake it on the oven for about 15-20 mins or till the cheese looks melted.
  15. Serve hot .

My Tip:

Always make sure that the milk is warm ; not too hot nor too cold . Remember that the yeast needs a perfect temperature . Make sure to keep your pizza bases in a warm place for a second round of rising without which the pizzas won't turn out fluffy and soft . Use as little oil as possible , otherwise it'll make your pizza oily .
