Nei Appam/Sweet Appams

Ingredients to make Nei Appam/Sweet Appams

  • wheat flour- 1 cup
  • Ripe banana - 1
  • Flattened rice, soaked & drained- 1 cup
  • jaggery 3/4 th cup ( can be increased or decreased as per your sweetness preference)
  • cardamom, ground- 1/2 tsp
  • Grated Fresh coconut- 2 Tbsp
  • Roasted semolina- 3 Tbsp
  • Pinch baking soda (optional)
  • ghee- For frying

How to make Nei Appam/Sweet Appams

  1. Grind the flattened rice along with banana and jaggery to a smooth paste.
  2. Then add this mixture to the wheat flour. Add sufficient amount of water so that the batter is little thick (but of dropping consistency).Ensure there are no lumps.
  3. Now add grated coconut, roasted semolina and cardamom powder. Mix well.
  4. At this stage you may choose to add baking soda or avoid it. If adding soda rest the batter for about 10 mins.
  5. Your batter is ready. Now keep the pan for heating and then pour little ghee in each mould of the pan.
  6. When the pan is hot, pour the batter in each mould. Cook on low flame till it browns well before u turn.
  7. Turn & cook, take off from the moulds when they are evenly browned & crispy on the outside.
  8. Prepare for the next batch in the same manner.

My Tip:

Keep the flame low always, since it has jaggery, high heat will burn your appams from the outside while the inside will remain raw. Nei Appams can be made using soaked & ground rice too.. But i personally prefer the ones made with wheat flour since they are softer in inside.
