Ingredients to make Aalo Bonda

  • For the batter-
  • 1 cup besan/gram flour
  • 1tbsp rice flour (optional)
  • 1/2 cup or little more cups water
  • A pinch of baking soda
  • 1tsp ajwain/ carom seeds salt as required
  • For Filling-
  • 3 to 4 medium sized potatoes
  • 2 chopped green chilli
  • 6to 7 curry leaves
  • 1 tbsp chopped coriander leaves
  • 1 tbsp ginger-garlic paste
  • A pinch of asafoetida/hing
  • 1/4 tsp lemon juice
  • 1/2 tsp Crushed whole coriander
  • 1 tsp red chilli powder
  • salt as required
  • oil for deep or shallow frying

How to make Aalo Bonda

  1. first boil the potatoes in pressure cooker with required water.
  2. Take two to three whistle.
  3. Cool it and drain it in cold water
  4. then peel and mash them .
  5. In a bowl take all ingredients for stuffing mention in filling ingredients.
  6. Mix it well and make small sized balls from this mixture.
  7. In another bowl make a thick flowing batter with ingredients mentioned in batter.
  8. On medium flame heat oil for deep frying in a kadai or pan.
  9. dip each potato ball in the batter and coat it well with the batter.
  10. add the batter coated potato balls in the medium hot oil.
  11. fry the aloo bondas till golden .
  12. Drain aloo bonda on oil absorbing paper towel.
  13. serve aloo bonda hot with coconut chutney , tomato ketchup or tamarind chutney.
