Ingredients Serving: 4

  1. Aalu/Potatoes 500 gm
  2. Besan 200 gm
  3. 1 and 1/2 tsp green chilli paste
  4. 1 and 1/2 tsp ginger-garlic paste
  5. 1/4 tsp baking soda
  6. Coriander
  7. 2 tsp lemon juice
  8. 1/4 tsp haldi for batter and 1/4 tsp for aalu masala
  9. 3-4 tsp oil for batter and 3-4 tsp for aalu masala
  10. 1/2 tsp each of mustard seeds, cumin seeds and hing for tadka
  11. Salt to taste
  12. Water for the batter
  13. Oil for frying


  1. First wash the potatoes properly and boil them in a cooker. Once it's boiled, let it cool completely, then peel and mash it.
  2. Than take a bowl, put in besan, salt, haldi and water to make the batter. Then add 3 tbsp of hot oil. Mix it all neatly. Now add the baking soda and mix it well once again.
  3. Take a pan, put in oil to heat, then put in mustard, cumin seeds, hing, green chilli paste and saute. Then add the ginger-garlic paste and saute, next add the mashed potatoes and mix all ingredients neatly. Add haldi, lemon juice, salt, sugar to taste, coriander, mix all the ingredients and keep it on a low flame with a lid to cook for 5 mins.
  4. After this time, let it cool completely and make the vadas with your hands into any shape as desired.
  5. Take a kadhai, put in oil to heat, then take the vadas, put it in the batter first and into the hot oil one by one. Fry these vadas till they are a little golden brown in colour.
  6. The Aalu vadas are ready to be served with imli chutney and fried green chillies.
