Banana Loaf

Ingredients to make Banana Loaf

  • flour 2 cups
  • eggs ,4 large, at room temperature
  • sugar 1/2 cup
  • Sunflower or coconut oil 1 -1/4 cup
  • salt 1/4 teaspoon
  • baking soda 2 teaspoon
  • Baking powder 2 teaspoon
  • Butterscotch essence 2 teaspoon
  • 3 bananas, 2 mashed and 1 cut into rounds
  • almond flakes , optional

How to make Banana Loaf

  1. Sieve flour , salt , baking powder and baking soda. Keep aside.
  2. Powder granulated sugar.
  3. Beat eggs , oil and sugar until sugar is dissolved.
  4. Add butterscotch essence and whisk a few more minute.
  5. Mix in flour little at a time until all of it is used up.
  6. Gently fold in the mashed banana.
  7. When well combined pour it into a loaf tin lined with butter paper. And tap it on the table top to release any air bubbles.
  8. Arrange the roundels of banana. Sprinkle with almond flakes if using .
  9. Bake in pre heated oven at 180° C for 35- 40 min.
  10. To check, insert skewer or toothpick it should come out clean . If not bake for an additional 5 min.

My Tip:

You can even add chocolate chips or dessicated coconut while folding in the mashed banana. Substitute wheat flour for refined flour for a healthier version.
