Banarsi Aloo

Ingredients to make Banarsi Aloo

  • Poatato-800gm
  • oil to fry
  • ghee-50gm
  • Whole garam masala-10gm
  • fennel-5gm
  • Ajwain-5gm
  • cumin-10gm
  • mustard seeds-5gm
  • fenugreek seeds-3gm
  • Black peppercorn-5gm
  • hing- a pinch
  • coriander powder-10gm
  • turmeric powder- 1teaspoon
  • red chilli powder- 1 teaspoon
  • ginger paste -1tablespoon
  • tamarind pulp-100gm
  • sugar-1 tablespoon
  • coriander 10gm
  • salt to taste

How to make Banarsi Aloo

  1. Wash and peel potato.
  2. Heat oil in kadai and deep fry over medium heat until half cooked.and light brown in colour.
  3. Heat ghee in kadai add whole garam masala ,fennel ,ajwain,mustard seeds,fenugreek,hing and black peppercorn .saute for a minute,add ginger paste and stirr for a minute
  4. Now add coriander powder ,turmeric,red chilli powder,salt and 2 cups water.and boil for 5 minutes.
  5. Now add fried potato ,saute for a minute now add tamarind pulp and sugar ,bring it to boil .
  6. Simmer the gas until the potatoes cooked and the gravy became thick.
  7. Serve in a bowl garnish with chopped coriander.
