Brinjal and Capsicum Stir Fry

Ingredients Serving: 2

  1. 4 small round brinjals
  2. 12 capsicum small size
  3. 1 onion small sliced
  4. 12 tsp ginger garlic paste
  5. 1 tbsp stir fry sauce
  6. 12 tsp turmeric
  7. Finely chopped spring onion for garnish
  8. 1 tbsp oil
  9. Salt to taste


  1. Wash and clean the brinjal and capsicum cut the brinjal into round thick slices and cut the capsicum into big chunks
  2. Heat the pan add oil when oil is hot add sliced onions stir add ginger garlic paste fry till raw smell goes. Add salt and stir
  3. Add sliced brinjal stir for 2 to 3 minutes. Add turmeric stir then add capsicum stir, cover and cook for 4 minutes on a low flame
  4. After 4 minutes add stir fry sauce and mix well and add 2 tbsp water. Stir well cook for 2 minutes switch off the flame
  5. Sprinkle spring onion. Serve hot.
