Crispy Pancakes

Ingredients to make Crispy Pancakes

  • wheat flour 1 tbsp
  • Rice flour 2 tbsp
  • besan 1 tbsp
  • Ragi flour 1 tbsp
  • Bajra flour 1 tbsp
  • Jowar flour 1 tbsp
  • White oats 1 tbsp
  • Rava 2 tbsp
  • Corn flour 1 tbsp
  • salt to taste
  • green chillies 2 to 3
  • ginger paste of a 1 inch piece
  • Kadipatta 20-25 leaves
  • coriander 1 handful
  • water to make batter
  • oil for pan frying

How to make Crispy Pancakes

  1. Grind the chillies, kadipatta, ginger and coriander to a rough paste.
  2. Mix all the flours and the salt.
  3. Add some water and mix well so that no lumps remain.
  4. Add water to make spreadable batter.
  5. Add the paste you have made and mix well.
  6. Oil the frying pan and heat it.
  7. Once the pan is hot, spread a ladleful of batter like a dosa.
  8. Pour a tsp of oil around the pancake / dosa and cook on medium heat.
  9. Cook till you see browning at the edges.
  10. Turn over the pancake and cook for half a minute.
  11. Serve hot with chutney or sauce or chutney powder, as you like.

My Tip:

1. If you are using an iron tava, smear oil on it, then heat it. Switch off the gas and let the tava cool down. Heat it again when you are about to make the pancakes. 2. You can add grated carrot, potato, onion, methi etc to make it healthier.
