ABOUT Sanjyachi Poli - Sweet Flatbread RECIPE

Sanjyachi poli is a traditional Maharashtrian Sweet flatbread stuffed with Sanja ( sanja means shira/halwa). Its outer cover is made with wheat flour but I have used oats flour also to make it more nutritious. It is a simple and nutritious dish which can be prepared in short time.

Ingredients Serving: 6

  1. For Sanja ( stuffing ) :-
  2. Barik Sooji (semolina) 1 cup
  3. Jaggery (Gur) 1 1/2cup ( I have used organic jaggery )
  4. water- 1 1/2 cup
  5. Cardamom powder 1/2 teaspoon
  6. Ghee 1/4 cup for sanja and to apply on roasted sanja poli
  7. For Dough :-
  8. Wheat Flour 1 1/2Cup and Oats flour 1/2 cup ( Grind 1/2 cup oats in mixter to make the powder. Oats powder is optional, if u r not using oats powder, then directly take 2 cups wheat flour )
  9. Salt to taste
  10. Water as required
  11. Refined oil 1tsp

Instructions

  1. Take flour, little salt and oil in a big bowl. Mix well, then start adding small amount of water incrementally and knead into a soft dough like we prepare for making chapatis.
  2. Time to prepare the Stuffing mixture ( Sanja) now. :- Heat 2 tbsp ghee in the heavy bottomed pan.
  3. Roast the sooji on medium flame till a nice aroma comes and becomes golden brown.
  4. Add in water ( Normal water, no need to use hot water) and jaggery, Stir and mix well to avoid lumps. Cover and cook for a minute.
  5. Quickly it will be more like liquid. Don’t panic. Keep stirring on slow flame.
  6. Add in Cardamom powder and mix well. Keep mixing again for a minute and then switch off the gas. Let it cool a bit.
  7. Make lemon sized round balls out of the dough.
  8. Take one dough ball, sprinkle some wheat flour over it and roll into approx. 4-5 inch diameter circle. Put 2 tbsp. Sanja (stuffing) in the center.
  9. Seal it by gathering edges into the center completely.
  10. Flatten it using hands, sprinkle some flour over it and roll again into 6 inch diameter circular shape.
  11. Heat a tawa/frying pan to fry the sanjyachi poli over medium flame.
  12. In above material it makes around 8 Sanja polis.
  13. Roast the polis from both sides applying some ghee. Serve hot or cool as u like.
  14. Very good option for kids tiffin.

My mother use to make these whenever we hollered for dessert after dinner, n loved every bit of it.
