ABOUT Pork Curry RECIPE

This tasty and tangy pork curry is a very popular dish that is widely cooked in Goa.

Ingredients Serving: 4

  1. 500 gms Pork cut into large cubes
  2. 3 onions pureed
  3. 1 tablespoon garlic paste
  4. 1 tablespoon ginger paste
  5. 1 tablespoon cumin powder
  6. 1 tablespoon vinegar
  7. ½ tablespoon red chilli powder
  8. ½ teaspoon turmeric
  9. 1 teaspoon coriander powder
  10. 1 teaspoon pepper powder
  11. 1 teaspoon sugar
  12. 2-3 cloves
  13. 2-3 cardamoms
  14. 1 ” stick cinnamon
  15. 3 tablespoon cooking oil
  16. ½ cup hot water
  17. Salt

Instructions

  1. Heat the oil in a pressure cooker, stir fry the ginger and garlic pastes for a minute and add the onion paste.
  2. Cook on a low flame till the onions begin to brown, add all the whole and powder spices except the pepper powder and sugar, along with 2-3 tablespoon of hot water.
  3. Let the masala cook for few minutes and add the vinegar, when the masala cooks, the oil will be released.
  4. Add the pork and sear on a medium low flame, turning regularly so the masala doesn’t burn.
  5. Once the meat is lightly browning, add the cup of hot water and simmer on low for 45 minutes.
  6. If the meat is cooked through, you can pressure cook it for one whistle to soften the meat or cook for another 15-20 minutes till the curry is cooked.
  7. You can add more water half way through cooking but check seasoning. Finish with sugar and pepper, mix it all in.
  8. Serve hot with steamed rice.

Turned out simply awesome. I made it wholly in the pressure cooker. And I skipped the sugar bit because I didn't want to tone down the spice. Also, I added a pinch of Kashmiri red chilli powder, for colour. Thank you for this recipe!
