ABOUT Stuffed Chicken Buns RECIPE

Ingredients Serving: 3

  1. Plain flour - 1 1/2 cup
  2. Oil - 1 tsp
  3. Salt - 1/2 tsp
  4. sugar - 1tsp
  5. Dry active yeast - 1tsp
  6. Warm milk - 1/2 cup+ little more to brush the buns
  7. Butter melted
  8. for the stuffing:
  9. Chicken - 300 gms
  10. Onion - 3 +1
  11. Ginger garlic paste - 1 tsp + 1/2 tsp
  12. Tandoori chicken masala - 1 tsp
  13. Red chilli powder - 1/2 tsp
  14. Salt to taste
  15. Turmeric - 1/4 tsp
  16. Few whole spices
  17. A tsp of ghee


  1. In a bowl add the warm milk, sugar and yeast. Mix properly. Cover and rest for ten minutes . Froth would appear. It is ready to use. Now take the plain flour in a bowl, add the salt and mix.
  2. Now add the yeast mixture and make a soft dough. Can use some lukewarm water if not sufficient.
  3. Knead the dough for 5 mins and cover and keep it for 1 1/2 hour or more. Prepare the chicken stuffing meanwhile.
  4. Boil chicken pieces with the bones adding the whole spices, ghee, water, onion shred, ginger garlic paste and little salt
  5. When done, shred the chicken. (Reserve the stock as soup adding lemon and pepper as seasoning)
  6. Now take a pan and saute onions then add the ginger garlic paste, chicken shred,dry masalas. Saute for a while. Let it cool.
  7. After the dough has proved, till doubled in size take it out and punch it gently 2 to 3 times to remove the air from it. Now make Equal sized balls from the dough (around 7)
  8. Apply oil to your palms, take a ball of dough, flatten it on your palm and add at least 1 1/2 tsp of the filling in the centre
  9. Pull and bring all edges together and seal the ball. make a smooth ball. Cover and keep for another 15 to 20 mins.
  10. Now brush the top of the buns with milk and bake in a preheated oven at 180 degrees C for 15 mins
  11. When cooked broil for few more mins to get a brown texture of a bun. Now remove. Brush with melted butter. Let it cool for a while and serve.
