Cream Cheese Pound Cake

Ingredients to make Cream Cheese Pound Cake

  • 195 gms all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 170 gms unsalted butter
  • 113 gms cream cheese
  • 225gms sugar
  • 1 tsp vanilla extract
  • Zest of one lemon (optional)
  • 3 eggs
  • 50 gms blueberries fresh

How to make Cream Cheese Pound Cake

  1. Preheat oven to 180 C .grease a loaf pan
  2. Sift all the dry ingredients
  3. In a stand mixer or a hand mixer beat the butter and cream cheese until smooth, gradually add the sugar ,scraping down the sides of the bowl as needed,continue beating on medium high speed until light and fluffy.
  4. Add the egg,one at a time mixing well after each addition,scrape in between and add dry ingredients in 3 additions,mix until incorporated.
  5. Once done mixing, add blueberries (dust with flour) and fold them in gently ensuring they don't get crushed. pour the batter into the greased pan and bake for 30 min or until a tooth pick comes put clean.
  6. Remove the cake and let it cool on a wire rack.

My Tip:

All the ingredients should be at room temperature.
