ABOUT Dates Carrot Cake RECIPE

This is definitely a keeper recipe. Dates and carrots make a delicious and healthy combination

Ingredients Serving: 4

  1. All Purpose Flour/ Maida - 1 cup
  2. Baking Soda - 3/4 teaspoon
  3. Vegetable Oil - 3/4 Cup
  4. Baking Soda - 3/4 Teaspoon Salt ( a pinch)
  5. Sugar - 3/4 cup
  6. Eggs - 2
  7. Vanilla extract - 1/2 teaspoon
  8. Dates(Chopped ) - 1 cup
  9. Carrots(Grated ) - 1/2 cup
  10. For the caramel -
  11. Sugar - 1/2 cup
  12. Hot Water - 1/4 cup

Instructions

  1. For Caramel - Take sugar in a deep sauce pan and heat it on medium heat .
  2. The sugar will get dissolved and turn brown. Swirl the pan often to get the sugar caramelized equally on all sides.Do not use a spoon to stir.
  3. Make the caramel really dark and on the bitter side. The bitter the caramel,the richer will be the color of the cake and the sweetness well balanced.
  4. Slowly add hot water to the caramel as adding water to the extremely hot caramel may bubble up causing serious burns.
  5. Switch off the heat as soon as the Caramel is dissolved.
  6. For Cake, Prepare your pan by applying butter or oil and dusting it with a little flour. Preheat the oven to 350°F/ 180°C.
  7. Sift together flour, baking soda and salt together and keep aside.
  8. Add a tablespoon of flour into the grated carrots, chopped dates and mix it.
  9. Beat together eggs and sugar.Add the oil gradually beating the mixture really well.
  10. Add the caramel and vanilla essence.
  11. Add the flour mixture and fold slowly and gently so that no lumps are found.
  12. Fold in the dates and carrot into the batter slowly.
  13. Pour the batter into the cake pan and tap gently for the batter to get levelled
  14. Bake for 40 to 45 minutes or until a tooth pick inserted in the middle of the cake comes back clean.
  15. Enjoy the cake while warm as it is or with cream cheese frosting.
