Ingredients Serving: 8

  1. For Vanilla sponge cake -
  2. Maida 120 gm
  3. Baking Powder 1 Tsp
  4. Soda 1/2 tsp
  5. Salt 1/2 tsp
  6. Condensed Milk 200 gm
  7. Sunflower oil 60 gm
  8. Vanilla essence 1 tsp
  9. Water 100 to 125 ml
  10. For decoration -
  11. Whipped cream 300 gm
  12. Tinned Pineapple 3 to 4 slices
  13. Green grapes 200 gm
  14. Black grapes 200 gm
  15. Kiwi slices 12
  16. Tinned cherries
  17. Mint leaves
  18. Coloured desiccated coconuts 50 gm
  19. Orange juice 1 cup
  20. Mixed fruit jam


  1. For Vanilla cake sponge -
  2. Sieve maida, baking powder, soda and salt.
  3. Beat condensed milk and oil well.
  4. Add all dried above ingredients, vanilla essences and water and beat till smooth
  5. Pour the batter in the dusted cake mould, bake in preheat oven at 180 degrees C for 30 to 35 minutes.
  6. Remove the baked cake cool on wired rack.
  7. Divide the cake into 3 parts.
  8. Put the first part on cake board, soak with orange juice, apply mixed fruit jam, then spread fresh cream, put fresh fruits start from the cake rim. spread fresh cream again.
  9. Put the second part of the cake and repeat the above steps.
  10. Soak the top layer with orange juice, apply the mixed fruit jam, fresh cream and decorate with coloured desiccated coconut, fresh fruits, mint leaves and props related to the event.
  11. Served it chilled.
