ABOUT Jujubes RECIPE

Cubes of jelly rolled in sugar.

Ingredients Serving: 5

  1. 250 gms sugar + extra for rolling
  2. 1/2 cup water
  3. 125 gms liquid glucose
  4. 25 gms gelatin
  5. 1 1/2 tbs lemon juice (strained)
  6. Food colour
  7. essence

Instructions

  1. Add gelatin to 1/4 cup water and set aside for 10 mins.
  2. In a heavy bottom pan, take sugar, 1/4 cup of water, glucose and mix well. Put it on heat and cook on low heat till the sugar melts. Bring it to a boil.
  3. Boil the syrup until it reaches the hard ball stage. (you can check this by using a clean spoon when the syrup is dropped into cold water it forms a hard ball.)
  4. Now add in lemon juice and mix well.
  5. Switch off heat. Add in gelatin,mix and stir till it is melted.
  6. Divide into 3 bowls and add food colour and essence. Pour into greased tins and let it set overnight.
  7. Cut into cubes and roll it in sugar.
