Caramel Fruit Tart

Ingredients to make Caramel Fruit Tart

  • Pastry crust -
  • 1 1/2 cups all-purpose flour
  • 1/8 tsp salt
  • 1/2 cup butter
  • 1/4 cup granulated sugar
  • 1 egg
  • Pastry cream -
  • 300ml milk
  • 1/2 vanilla bean
  • 3 large egg yolks
  • 50 gms sugar
  • 2 tbsp cornstarch
  • Whipped cream 1 1/2cup
  • Caramel 1/2 cup
  • apricot jam with 1 tbsp water for glaze
  • Fruits as per the requirement

How to make Caramel Fruit Tart

  1. Pastry crust - Mix flour with salt add butter to the flour mixture and rub into flour till it resemble like bread crumbs ,egg and sugar and add to the flour mixture mix until a ball is formed roll into a disc cling wrap and refrigerate for 15-30 min
  2. Lightly butter and flour a 6-inch tart pan and preheat oven to 205 C Roll the dough and press into the tin lightly prick the bottom part place in the oven and bake for 5 min then reduce the temp to 180 and bake for another 15 minutes
  3. Pastry cream - In medium bowl mix, sugar and egg yolks .sift the flour and cornstarch and add it to egg yolks and make a smooth paste
  4. In a saucepan bring milk and vanilla bean to a boil , remove from heat and slowly add to the egg mixture whisking constantly .then pour the egg mixture into a medium pan and cook over medium heat until it boils. Keep whisking constantly until it becomes thick. Let it cool down add whipped cream and caramel.
  5. Fill the tart pan with the pastry cream and arrange the fruits (apply apricot glaze)

My Tip:

You can make the tart and pastry cream a day ahead.
