Vegetable Biryani

Ingredients to make Vegetable Biryani

  • 1 cup Basmati rice
  • 2 Cups water
  • 1 onion (medium sized) chopped
  • 2 medium tomatoes grated
  • 1/2 cup each (peas,carrots,cauliflower, capsicum,beans)
  • 1/2 cup spring onions chopped
  • 2 potatoes cut into small pieces
  • 2 tbsp each (methi leaves, coriander leaves)
  • 2 bay leaves
  • 4 cloves
  • 2 big elaichi
  • 1 tsp jeera
  • 1/2 tsp haldi
  • 1/2 tsp coriander powder
  • 1 tsp - Sabzi masala
  • 2 tsp ghee
  • 1 tsp - Sabzi masala
  • curd 1 cup (to make raita. It is optional)

How to make Vegetable Biryani

  1. Wash rice properly and keep it aside.
  2. In a non- stick Kadhai put oil, let it heat then add jeera, bay leaves, cloves and elaichi. Let it splutter.
  3. Now add ginger garlic paste alongwith sabzi masala, coriander and haldi powder. Let it cook properly. It will give out a lovely flavour.
  4. Add capsicum so that it gets slightly fried. Add onions let it become golden brown now add the tomatoes. cook till it leaves the oil.
  5. Add all the chopped vegetables and cool till they leave the oil and gives a cooked flavour.
  6. Now in this add the washed rice and mix it properly, now add ghee for a lovely flavour. Once done add water and salt.
  7. Cook it for 15 minutes till the rice is done.
  8. Serve with plain curd, Raita ( pomegranate, pineapple, cucumber or broccoli) individual choice. You can serve with pickle also.

My Tip:

Use pure ghee for greater flavour
