Ingredients: For the muffins-; 1 1/2 cups All Purpose Flour; 1/2 cup cocoa powder; 1 tsp Baking powder; 1/2 tsp baking soda; 3/4th cup of sugar; 1 tsp vanilla extract; 3 eggs; 200ml milk; 100gms of butter; 3-4 drops of red colour or as required; For the cream cheese frosting-; 150gms softened cream cheese; 1/2 cup softened butter; 70gms castor sugar or powdered sugar; 1 tsp vanilla extract

ABOUT Red Velvet Muffins RECIPE

Who doesn't enjoy Red Velvet Cake ? It's everyone's favourite . This time , however , I made these muffins . Simple yet delightful . A simplified form , easy to make and done quick . Enjoy it with the traditional cream cheese frosting or any topping of your choice .

Ingredients Serving: 10

For the muffins-
1 1/2 cups All Purpose Flour
1/2 cup cocoa powder
1 tsp Baking powder
1/2 tsp baking soda
3/4th cup of sugar
1 tsp vanilla extract
3 eggs
200ml milk
100gms of butter
3-4 drops of red colour or as required
For the cream cheese frosting-
150gms softened cream cheese
1/2 cup softened butter
70gms castor sugar or powdered sugar
1 tsp vanilla extract

Instructions

Preheat your oven to 180 degrees C
In a bowl , mix together your dry ingredients .
In another bowl , whisk together your eggs , sugar , vanilla extract , oil and milk .
Gradually , add in your dry to the wet and whisk well to avoid formation of lumps .
Do this till you have used up your entire flour mixture .
In a muffin tin lined with liners , add in a scoopful of this batter into each section .
Bake this for about 25-30 mins or till done .
Take them out and set aside to cool completely .
Meanwhile , in a large bowl , whisk in your cream cheese along with the butter , sugar and vanilla extract .
Let this cool a little as well .
Use this as a frosting to decorate your muffins .
