Cauliflower Roast

Ingredients to make Cauliflower Roast

  • cauliflower 1
  • onion paste 3 tablespoons
  • Chopped garlic 5 pods
  • garlic paste 1 tablespoon
  • ginger paste 1 tablespoon
  • Mouri/fennel seeds 1 tablespoon
  • Green peas 1/2 cup
  • salt to taste
  • sugar to taste
  • Black pepper powder 1 tablespoon
  • Refined oil

How to make Cauliflower Roast

  1. Boil water in a pan, when it starts boiling turn off gas and put the cauliflowers in. Keep for 30 seconds and then drain water completely.
  2. Heat oil in a wok and add the fennel seeds and chopped garlic.
  3. When tempered, add the onion paste and fry.
  4. Afterwards add ginger, garlic paste and salt and sugar and fry till the oil separates.
  5. Add the cauliflowers and mix well, cover the wok and cook in mild flame.
  6. When the cauliflowers are almost boiled and all the water it releases dries out add the peas and cover for another 2 minutes.
  7. Remove the cover and cook in high flame for 2 minutes.
  8. Add black pepper powder and mix well.
  9. Serve with paratha/roti.

My Tip:

Soaking cauliflowers in boiled water prevents the cauliflowers from breaking during the cooking process.
