Lauki Moong Dal Parantha

Ingredients to make Lauki Moong Dal Parantha

  • 2.5 cups wheat flour.
  • 1.5 cups of grated bottle guard (dont throw away the seeds grind them into fine paste)
  • 1 tsp garlic finely chopped.
  • 1 tsp green chili finely chopped.
  • 1/2 cup soaked split green gram/moong dal
  • 2 tbsp finely chopped coriander leaves.
  • 1/2 tsp carom seeds.
  • 1 tsp freshly ground garam masala.
  • A pinch of turmeric powder.
  • 1 tbsp butter and oil
  • salt to taste.

How to make Lauki Moong Dal Parantha

  1. First grind moong dal/split green gram along with garlic and green chili.
  2. Then In a vessel add in flour ,grated bottle gourd ,paste of seeds of the bottle gourd,moong dal chili garlic paste(refer notes)salt, turmeric powder, garam masala and coriander leaves.
  3. Make a dough out of it with little oil.Theres no need to add water as theres enough water content in the bottle guard.
  4. The dough should be neither too hard nor too soft. Cover and keep the dough aside and let it rest for some time.
  5. After an hour pinch the dough in small balls and roll it out into small paranthas. Cook the dough in hot griddle till its nice and crisp.
  6. Serve with a dash of butter.

My Tip:

There's no need to add water in moong dal while grinding because its already soaked. If you find your dough is sticky while kneading add some more flour to it. You can use store bought garam masala too but grinding whole garam masala has a unique fresh flavor.
