Ingredients Serving: 8

  1. Dry red chillies - 10-12
  2. Coriander seeds - 2 tbsp
  3. Cumin seeds - 1 tbsp
  4. Pepper - 1/2 tbsp
  5. Cloves - 1/2 tbsp
  6. Cinnamon - 2" piece
  7. Cardamom - 2 pods, peeled
  8. Fenugreek seeds - 1/2 tsp
  9. Fennel - 1/2 tsp
  10. Mace - 2-3 strands
  11. Ginger powder - 1 tsp
  12. Garlic Powder - 1 tsp
  13. Turmeric powder - 1 tsp

Instructions

  1. Dry roast red chillies and keep aside.
  2. Add coriander, cumin, fennel and fenugreek to the same pan and roast till its aromatic. Take out and keep aside to cool.
  3. Take all the remaining whole spices and roast these as well.
  4. When all spices are cool, grind to a fine powder. Take out in a bowl and mix in the spice powders.
  5. Store in an airtight container and use as required.
