ABOUT Gajar Khajur ka halwa RECIPE

I learnt this recipe from Masterchef Sanjeev Kapoor's cookbook. The best part of this halwa is that it tastes like Gajar ka halwa but requires very little ghee and sugar for preparing it.

Ingredients Serving: 4

  1. Grated carrots - 5 medium
  2. Dates, deseeded and chopped - 3/4 cup
  3. Ghee - 2 tsp
  4. Sugar - 1/2 cup
  5. Milk - 1 cup
  6. Mawa or khoya - 1/2 cup
  7. Cashewnuts - 4-5 roughly chopped
  8. Green cardamom powder - 1/2 tsp
  9. Almonds - for garnishing

Instructions

  1. Heat ghee in a non-stick Kadai. Add grated carrots and sugar and cook for about 5 minutes.
  2. Add milk and cook for 7 minutes.
  3. Now add mawa, dates, cashewnuts and cardamom powder. Cook till the mixture becomes dry.
  4. Garnish with almond slivers.
