Pasta Arrabbiata

Ingredients to make Pasta Arrabbiata

  • Pasta (penne or any variety) 500gm
  • chicken boneless cubes 300gm
  • olive oil 4 tbsp
  • garlic cloves 4 finely minced
  • salt to taste
  • onions 2 finely chopped
  • 4 -5 large tomatoes
  • tomato puree 5 tbsp
  • chilli flakes 1 1/2 tbsp
  • Fresh red chilli finely chopped or black pepper powder 1tbsp
  • Thyme a tsp
  • Oregano a tsp
  • Italian seasoning a tsp
  • parsley flakes a tbsp
  • Fresh parsley if available finely chopped 2 tbsp
  • Mozzarella cheese grated a cup..some to mix in the pasta and some to garnish on top before serving.

How to make Pasta Arrabbiata

  1. Boil the pasta with a tbsp of olive oil, salt a tsp for about 15 mins on high flame and drain. Keep aside.
  2. Blanch the tomatoes, peel the skin off and chop them finely.
  3. In a tbsp of olive oil, shallow fry the chicken cubes and keep aside. If desired can marinate the chicken with some salt and black pepper powder for about 15 mins and then fry. I did the same.
  4. In a pot, heat the 2 tbsp of the remaining oil, saute the garlic.
  5. After that is done, add the onions. Saute it until light pinkish in colour and the raw smell disappears.
  6. After this, add the blanched and chopped tomatoes, tomato paste or puree readymade one, Add all the other seasonings one by one. Lastly add the pasta and fold in nicely. Add some salt now according to taste.
  7. Let it simmer on low flame for 5 mins.
  8. Add the mozzarella cheese and mix well.
  9. Just before serving, sprinkle some grated cheese on every plate along with parsley and serve piping hot and spicy pasta extravaganza to your friends and family alike.
