Ingredients Serving: 4

  1. Small brinjal - 8
  2. Salt
  3. White sesame seeds- 2 tbsp
  4. Cumin seeds - 2 tsp
  5. Peanuts - 3 tbsp
  6. Dry coconut - 3 tbsp
  7. Green chillies (slit) - 3
  8. Coriander leaves (chopped) - 1 tbsp
  9. Turmeric powder- 1/2 tsp
  10. Red chilly powder- 1/4 tsp
  11. oil
  12. Mustard seeds - 1 tsp
  13. Kalonji seeds - 1 tsp
  14. Curry leaves - 10
  15. Ginger (chopped) - 1 inch
  16. Garlic (chopped) Cloves- 10
  17. Tamarind paste- 2 tbsp
  18. Water - 1/2 cup
  19. Honey - 1 tsp

Instructions

  1. Take the brinjals and cut them slightly in criss cross manner. Apply salt on these and leave them aside for 10 minutes.
  2. Strain and deep fry them in hot oil. Drain the excess oil.
  3. Roast the cumin seeds, sesame seeds, peanuts and coconut in 1 tsp oil.
  4. Make a paste of the above along with green chillies and little water. Take it out and mix coriander leaves, turmeric powder and chilly powder, salt to it.
  5. Heat 4 tbsp of oil, add mustard seeds, one tsp of the cumin seeds and kalonji. Once they splitter, add curry leaves.
  6. Then add the ginger garlic and atie for a minute.
  7. Then add the roasted masala paste and cook on a medium flame for 5-6 minutes.
  8. Add the tamarind paste, half cup water and honey. Once it starts boiling, add the fried brinjals.
  9. Once the gravy is thick , remove and serve.
